Ingredients:
2 pounds unpeeled large fresh shrimp
8 (12 inch) wooden skewers
2 bags (6 ounces) fresh spinach
2 mangoes, peeled and sliced
1 medium red onion, sliced
1 package (3 oz) goat cheese, crumbled
1 cup fresh raspberries
1 / 2 cup pistachios
*** *** Citrus Marinade
1 / 4 cup fresh orange juice
2 tablespoons chopped fresh basil leaves
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
1 clove garlic, minced
1 / 2 teaspoon crushed red pepper
Salt 1 / 4 teaspoon tea
*** *** Fresh basil vinaigrette
1 / 4 cup chopped fresh basil leaves
1 / 4 cup raspberry vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
Salt 1 / 4 teaspoon tea
Pepper 1 / 4 c. Tea
3 /4 cup extra virgin olive oil


Instructions:

Shrimp skin, veins removed, if desired.
